Trans fatty acids, also known as trans fat, is an artery clogging fat that can be found in margarine, shortening and fried foods.

According to the U. S. Food and Drug Administration (FDA) trans fats are harmful because it raises low-density lipoprotein (LDL), or bad cholesterol levels, which increases the risk of coronary heart disease.

According to the American Heart Association, trans fats are often used in foods because they’re easy to use, inexpensive to produce and last a long time, and many restaurants use trans fats to deep-fry foods because oils with trans fats can be used many times in commercial fryers.

“We are not concerned with shelf life for our foods because delivery trucks come each morning with fresh vegetables and meats,” Barber said. “People are very busy and many times aren’t able to cook healthy meals.
